Spice Roasted Pumpkin with Seedy Cumin Drizzle
Spiced roasted Delica pumpkin on a bed of tangy yoghurt with toasted pumpkin seedy drizzle. A vegetarian showstopper or a impressive mid-week meal.
Seedy Spinach Pesto
This has been the go-to pasta of the year so far for me. I’m obsessed with green food, and this is the best seasonal pesto to make ahead of time for a quick mid-week meal.
Crunchy Beans with Curry Leaf, Mustard Seeds and Coconut
You love bombay mix, but you’re looking for a homemade, healthy and satiating snack. This is for you.
Current Foodie Favs
Some of my favourites of the past few months. Includes some bits to eat and most importantly, the best spatulas you need to get.
Cucumber, Radish, Avocado Salad with Soy Dressing
Refreshing, vibrant, sweet, sour, tangy and umami. This creamy and crunchy salad is exactly what you need in summer warmth.
Tuna Croquettes (Fishcakes)
These tuna croquette are a staple recipe in my households. Perfectly spiced, the curry leaves bring that extra umph you don’t usually get, and made with pantry/freezer ingredients. They are wonderful.
Vanilla Chia Pudding
This chia pudding tastes like vanilla panna cotta, and you can top it with whatever your heart desires.
Cooling Soba Salad
On a boiling summers day this is the only thing I want to eat. This soba salad has the magical powers of cooling down your body, and being delicious at the same time.
Herby Bulgur Salad
I love salads, but sometimes a bunch of leaves isn’t enough. This bulgur salad is nutty, fresh, zingy, and perfect for a hot summers day.
Shiitake & Tofu Laab
Laab is one of my favourite meals for summer. It’s pungent seasonings and fresh herbs make the dish ridiculously delish.. but I had never had a plant based laab before making this one. The use of tofu and shiitake bring a meatiness to the dish, still keeping it light and adding even more flavour into the mix. This is definitely my new favourite laab.
L’étouffé Mackerel
L’étoufé sounds like a fancy dish, but in reality it just means smothered. In this case the fish is cooked on gentle heat with the lid on. It maybe one of the healthiest recipes i’ve made so far, but it’s still a delish one.
Basic Lentil dal
This is one of the staple dishes made in my household. There’s always this specific lentil dal wither fresh or in the freezer because it’s a perfect side dish. Whether it’s eaten alone with rice, or with some fish, chicken… It’s perfect. It’s also made of pantry staples only… so it really could not get any better.
Tomato Red Lentil Soup
Tomato soup is one of the most well known soups out there, with this recipe i use red split peas, as well as some spices to create something a little difference, but still reminiscent to the simple og tomato soup.
