Vanilla Chia Pudding

Chia seeds are known to be full of protein, fiber, antioxidants and most importantly alpha-linoleic acid, an essential omega-3 fatty acid thats great for tear production in the eyes- keeping them well lubricated and not dry.

This pudding takes 5 minutes to stir it together, pop it in the fridge overnight or a minimum of 3.5 hours, and it’s all set. The result really reminds me of panna cotta, so i love to top it with berries, but if they’re not in season it would go well with some stewed apples or pears, or whatever else you may want to top it with. I don’t add any extra sweetener as the chia mixture has enough honey to my taste.

makes: 3/4 cups

prep/resting time: 3.5+hours

Ingredients

2 tbsp chia seeds

3/4 cups milk, dairy-free or not

3/4 tsp vanilla paste

2 tsp honey

pinch of salt

Method:

1. Add all ingredients into a jar and mix well so that the honey and vanilla dissolve into the liquid.

2. Set the mixture in the fridge for a minimum of 3.5 hours. Stir before serving, and top with whatever topping you may want.
