Cucumber, Radish, Avocado Salad with Soy Dressing

With the warm weather finally making an appearance, I wanted a much fresher recipe up. This veggie combo is one of my favs for a salad; punchy and peppery radishes, creamy avocado, and refreshing cucumber - you can’t go wrong. The dressing accompanies the dish together so well, bringing umami, a touch of sour, slight sweetness from the rice vinegar, and a mellow nuttiness from the sesame. Takes no more than 5 minutes to make, and it’ll get gobbled up in a blink.

Prep/assembling time: 5 mins

Serves: 1-2 people

Ingredients

3 tbsp rice vinegar

1 tbsp + 1 tsp apple cider vinegar

1 tbsp + 1 tsp soy sauce

1 tsp toasted sesame oil

4 tbsps olive oil

1 tsp toasted black sesame seeds

1 bunch of radishes - roughly 1 cup or handful, trimmed and quartered

1 avocado, diced

1 cucumber, diced

salt

Method

1. In a bowl, add the dressing ingredients: rice vinegar, apple cider vinegar, soy sauce, sesame oil, olive oil, and black sesame seeds. Whisk together until the oil isn’t floating on top. Season with salt if needed - some soy sauces are saltier so you may not have to season.

2. Add your prepped radishes, avocado, and cucumber into the dressing. Toss to coat, and plate. Serve straight away.
