Pumpkin Beignets
Pumpkin beignet is maybe the most nostalgic dessert for me. These beauties are not too sweet, fluffy, custardy and super easy and quick to make. A real crowd pleaser.

Pasta e Ceci
A hearty bowl of pasta, perfect for the cool weather. Chickpeas, roasted peppers, tomato and oregano make up the delicious base.

Brussels Salad with Crispy Chickpeas
An inspired take from a classic Ceasar turned gluten-free and vegan. The possibilites to tweak and add to this recipe are endless.

Pak Choi, Ginger & Soy Mince Stir Fry
A delicious, and dish that can be eaten alone with rice or as a side. Fresh, zingy and full of umami, this veggie recipe won’t make you miss meat.

Sesame, Coconut, Peanut Porridge
This porridge recipe might be one of the creamiest ones you’ll ever have. Flavoured coconut, sesame and peanuts, the flavours meld perfectly and create a gorgeous decadent brekkie.

Very quick, easy and simple tuna side dish to make. Uses everything you should already have in your pantry.

Sweet Soy Braised Beef
Heavily inspired by Korean flavours, and bulgogi; this recipe is sweet, fatty, and has loads of umami.

Socca
Socca is one of my go-to easy meals. I made the base and top it off with anything I can find in the fridge. It’s filling and delicious. This specific one is creamy in the middle and crispy around the edges.

Mushroom Flatbread
A vegetarian (can be vegan) alternative to the OG lamb flatbread recipe. This version does not skimp out on flavour at all. The mushrooms, onion, sesame along with spices used make a delicious topping- whether or not you’re vegan or vegetarian, I swear, you’ll enjoy it.

Shiitake & Tofu Laab
Laab is one of my favourite meals for summer. It’s pungent seasonings and fresh herbs make the dish ridiculously delish.. but I had never had a plant based laab before making this one. The use of tofu and shiitake bring a meatiness to the dish, still keeping it light and adding even more flavour into the mix. This is definitely my new favourite laab.

Jammy Ratatouille
Ratatouille is the perfect summer dish that celebrates summer produce. It’s comforting, light, healthy and delicious. This specific recipe creates a jammy ratatouille that can be eaten hot or cold and with any carb you wish.
