Cabbage, Carrot, Tuna Stir Fry
This is a side dish my mum made so much growing up that after a bit I couldn’t stand it anymore. I went a long time avoiding it, until one day I decided to give it another go. It’s a simple stir fry that uses ingredients you should have on hand almost at all times; tinned tuna, cabbage, carrots, onion, cumin, turmeric, red chilli flakes and apple cider vinegar. Super simple to whip up, takes no time and makes a perfect side.
serves: 3-4 people
prep/cooking time: 15-20 minutes
Ingredients
1 tsp cumin seeds
200g canned tuna, drained
1 brown onion, sliced thin
1/2 tsp ground turmeric
1/4 tsp red chilli flakes
1/3 of a small cabbage (~ 185g), sliced thin
1 medium carrot, grated or julienned (thin matchsticks)
2 tsp apple cider vinegar
salt, oil
Method
1. In a pan oh medium high, add a generous glug of oil, and the cumin seeds. Toast them until they start to pop.
2. Add the tuna and onion to the pan, turn the heat up high, and stir fry it until the onions start to soften.
3. Add the turmeric, chilli flakes, cabbage and carrots, stir fry until slightly wilted but still crunchy.
4. Take it off the heat, add the apple cider vinegar, mix it in and season to taste with salt.
