Toast Toppings: Tomato & Cheddar

I’ve decided to start a series dedicated to some of my favourite toast toppings. This may sound ridiculous to do, but I love bread so much and finding new toppings always excites me. This series won’t be recipe based, but more about the ingredients I use.

Starting off the series strong is my favourite savoury toast topping: Tomato & Cheddar. It’s obviously not only those two ingredients, it’s made from scotch bonnet chilli jam, salted tomatoes, aged cheddar and to finish it off, maybe the best part about the toast… chunky chaat masala.

I was going through my spice cupboard one day throwing out a bunch of old spices and mixes I hadn’t used and came across a box of chaat masala. I had no idea what it was so I tasted it and its an incredible spice mix. After some googling, I read an article by Priya Krishna on Bon Appetit and she mentioned that the mix tasted great on anything with cheese, tomato soup amongst other ingredients. I put together the simple chilli jam, tomato and cheddar sarnie, sprinkled a little bit of chaat and this mix worked magic. It turned the dull toast into a flavour bomb, so good that each time i add a little more chaat than the last. The masala is made up of amchoor (dried unripe mango,)coriander, cumin, black salt, asafoetida/hing, and chilli powder. The tart/spicy/sour/funky/savoury mix is unlike any spice blends I’ve ever had before and really packs a delicious punch.
