On a boiling summers day this is the only thing I want to eat. This soba salad has the magical powers of cooling down your body, and being delicious at the same time.

Ginger Matcha Semifreddo with Coconut Black Sesame Brittle
After loads of brainstorming, the first ‘ice cream’ recipe is up. It’s not ice cream technically… it’s more a semifreddo, but vegan (if using without honey.) The dessert is a gorgeous green colour, and tastes like a heavenly nutty, gingery matcha latte. The perfect dessert to cool off.

Grilled Nectarine & Burrata Salad
Grilled nectarine, burrata, lemon oil and some fresh mint and basil… summer in a dish. This salad is sweet, fresh, creamy and heavenly good.

Peach Frangipane Galette
Galette’s are the best throw-together last minute types of dessert. Most are made up of some sort of flaky pastry with fruit in the middle, and they always come out looking beautiful and rustic. This one is also just as easy, but with a lil extra something called frangipane. It adds a delicious creamy and nutty flavour to the dessert.

Pandan Coconut Sticky Rice & Mango
Super creamy, sweet and fresh. Mango sticky rice is one of my favourite Thai desserts.

Recipe-less Summertime Spaghetti
My favourite go-to, lazy, comforting meal. I’ve made this dish so many times I could make it with my eyes closed. It’s simple, but packs a fresh punch of flavour.

Herby Bulgur Salad
I love salads, but sometimes a bunch of leaves isn’t enough. This bulgur salad is nutty, fresh, zingy, and perfect for a hot summers day.

Mushroom Flatbread
A vegetarian (can be vegan) alternative to the OG lamb flatbread recipe. This version does not skimp out on flavour at all. The mushrooms, onion, sesame along with spices used make a delicious topping- whether or not you’re vegan or vegetarian, I swear, you’ll enjoy it.

Lamb Flatbread
This lamb flatbread recipe is perfect to eat by itself or stuffed and used as a wrap. Whether it’s for a meal or a snack, I promise it won’t let you down.

Shiitake & Tofu Laab
Laab is one of my favourite meals for summer. It’s pungent seasonings and fresh herbs make the dish ridiculously delish.. but I had never had a plant based laab before making this one. The use of tofu and shiitake bring a meatiness to the dish, still keeping it light and adding even more flavour into the mix. This is definitely my new favourite laab.

Meet the palmier cinnamon roll hybrid. You get the best of both worlds; layers of flakey pastry, swirls of buttery warm spices and an extra lil something with the crispy caramelised sugar.

Courgette & Corn Fritters with Yogurt & Herb Chutney
These gluten free fritters are made to be super crispy on the outside and soft and chewy in the middle. The corn brings out pops of sweetness, all of this complimenting the slightly salty sour chutney. It really is one of the best summer snacks you could make.

Ratatouille is the perfect summer dish that celebrates summer produce. It’s comforting, light, healthy and delicious. This specific recipe creates a jammy ratatouille that can be eaten hot or cold and with any carb you wish.

Spicy Garlicky Teriyaki Sauce
Teriyaki sauce makes everything better. This specific one has a slight kick from the red chilli flakes and has a mild garlic taste. Use it on whatever protein you like to give your food an extra little umph.

Crispy Tofu Teriyaki
Chicken teriyaki used to be one of my favourite dishes. After cutting down on meat, I found a new love for crispy tofu. I promise this dish won’t make you miss meat. The tofu is shatteringly crispy and the glaze makes the whole thing even better.
