Honey, Lemon, Thyme Glazed Halloumi
This halloumi recipe was created ages ago, maybe 5 years? My best friend and I went through a phase where we loved halloumi and ate it every way we could. This is by far the best version we made, and to this day I’ve made it multiple times.
My favourite way to eat this is in a salad. I use the rest of the caramelised lemon juice to make a vinaigrette.

prep/cooking time: 20-25 minutes
Ingredients
3 tbsp olive oil
1 1/2 tbsp honey
1/2 tsp ground black pepper
2 stalks fresh thyme, stripped from its stalk
250g Halloumi, cut into 8 equal slices
1/2 lemon
Method
1. In a bowl, add the olive oil, honey, black pepper, thyme. Mix until everything becomes homogenous. Add in the pieces of halloumi and coat the pieces in the mix. Leave to marinate for 10-15 minutes.
2. In a non-stick pan on medium heat, add a tiny bit of oil, place the halloumi pieces and cook until golden on both sides.
3. Add the lemon half into the pan, fruit side down and let caramelise.
4. Pour the marination liquid onto the halloumi, let it start bubbling, turn the heat down to medium-low, and baste the halloumi pieces until the sauce starts to get sticky. Remove the lemon half and set aside.
5. When the sauce is sticky, and the halloumi pieces are coated in the sauce, remove from the heat and squeeze in 2 tsp of lemon juice into the sauce. Mix it in until the sauce is homogenous. Serve hot.
