Shiitake & Tofu Laab
Laab is one of my favourite meals for summer. It’s pungent seasonings and fresh herbs make the dish ridiculously delish.. but I had never had a plant based laab before making this one. The use of tofu and shiitake bring a meatiness to the dish, still keeping it light and adding even more flavour into the mix. This is definitely my new favourite laab.
Puff Pastry Orange Cinnamon Rolls
Meet the palmier cinnamon roll hybrid. You get the best of both worlds; layers of flakey pastry, swirls of buttery warm spices and an extra lil something with the crispy caramelised sugar.
Courgette & Corn Fritters with Yogurt & Herb Chutney
These gluten free fritters are made to be super crispy on the outside and soft and chewy in the middle. The corn brings out pops of sweetness, all of this complimenting the slightly salty sour chutney. It really is one of the best summer snacks you could make.
Jammy Ratatouille
Ratatouille is the perfect summer dish that celebrates summer produce. It’s comforting, light, healthy and delicious. This specific recipe creates a jammy ratatouille that can be eaten hot or cold and with any carb you wish.
Spicy Garlicky Teriyaki Sauce
Teriyaki sauce makes everything better. This specific one has a slight kick from the red chilli flakes and has a mild garlic taste. Use it on whatever protein you like to give your food an extra little umph.
Crispy Tofu Teriyaki
Chicken teriyaki used to be one of my favourite dishes. After cutting down on meat, I found a new love for crispy tofu. I promise this dish won’t make you miss meat. The tofu is shatteringly crispy and the glaze makes the whole thing even better.

Triple Chocolate Hazelnut Cookies
This is a brownie/cookie hybrid. A cookie with a crackly exterior and fudgy interior… that also tastes like Nutella. It tastes like an absolute dream.
Recipe-less Tofu scramble
Tofu is not everyones cup of tea, but when prepared properly it bursts with flavour. When I don’t feel like having eggs, or I want a veggie filled scramble, tofu is the way I go.
Basil Pesto
Nothing screams summer more than basil pesto does. This specific one is the perfect consistency to spread in sandwiches, use with pasta, and dollop in whatever it is that needs some extra flavour.
L’étouffé Mackerel
L’étoufé sounds like a fancy dish, but in reality it just means smothered. In this case the fish is cooked on gentle heat with the lid on. It maybe one of the healthiest recipes i’ve made so far, but it’s still a delish one.
Basic Lentil dal
This is one of the staple dishes made in my household. There’s always this specific lentil dal wither fresh or in the freezer because it’s a perfect side dish. Whether it’s eaten alone with rice, or with some fish, chicken… It’s perfect. It’s also made of pantry staples only… so it really could not get any better.
Coconut Dal Potato Curry
This coconut dal potato curry is unlike any veggie curry i’ve ever made. The blend of spices create a nutty aroma and the tempered spices you add at the end really take things to another level. This is a great dish to make whenever you have a hankering for curry.
Tomato Red Lentil Soup
Tomato soup is one of the most well known soups out there, with this recipe i use red split peas, as well as some spices to create something a little difference, but still reminiscent to the simple og tomato soup.
Pearl Barley Risotto with Lemon, Peas & Dill
Who knew pearl barley made such delicious creamy risotto?!! This classic simple risotto is finished with lemon, peas, parmesan and dill for a fresh spring touch. If you’re not into peas, swap it out for other seasonal veg, not into dill swap it out for another type of soft herb. Incredibly versatile and honestly easy to make- maybe easier than making rice risotto.
Recipe-less Creamy Egg Scramble
Scrambled eggs are harder to master than you think. The technique I use gives super creamy scrambled eggs- restaurant quality in my opinion, but don’t worry, they are incredibly easy to make, and only require base 3 ingredients.
Banana Bread
This banana bread is incredibly delicious and versatile. It can be made gluten-free as well as vegan. Add Daim chunks or any chunks you want to bring it that extra lil somethin somethin.
