Tuna Croquettes (Fishcakes)
These tuna croquette are a staple recipe in my households. Perfectly spiced, the curry leaves bring that extra umph you don’t usually get, and made with pantry/freezer ingredients. They are wonderful.
Single-serve Spiced Hot Choc Moelleux
It’s almost valentines day and a delicious chocolate based dessert couldn’t be more fitting! Make 1 and share…or keep it all to yourself. This molten chocolate cake is perfectly balanced with a little kick from the cayenne and a nice warming sensation from the cinnamon (also the hot gooey centre.)
Flakey Spinach Pie
If you love puff pastry - this is the pie for you! Super flakey, creamy, earthy and slightly sweet from the red onions. Every mouthful gets even better. A tribute to the wonderful spinach fatayer.
Vegan Strawberry Rose Eton Mess
If anyones been to Dishoom and has had their Strawberry Rose Eton Mess, your in for a real treat. This is inspired by those flavours, except its vegan, so no more bloating for all the lactose intolerant people out there!
Date Swirl Loaf
This loaf is a tribute to a very special shortbread biscuit I grew up eating on special occasions. It’s sweet and filled with comforting delicious flavours well known in the Levant region.
Gluten-Free Brown Butter Pecan Pear Loaf with Maple Icing
This iced loaf is gluten-free, packed with warm spices, nutty flavours and super moist from the pears.
Recipe Revisited: Vegan ‘Brioche’ Buns
I adapted my coconut rolls recipe to make some extra fluffy vegan ‘brioche’ buns.
5-Spice Spelt Crumble Jumbo Muffins
These crumble muffins are incredibly moist and fluffy, and a real treat to have any time of the day . Chinese 5-spice is used to flavour, but feel free to substitute with any spices you like.
Roasted Spicy Garlic Broccoli
Simple, but makes for a perfect side dish. Roasted crunchy, crispy garlicky, spicy broccoli.
Coconut Caramel Rolls
My pride and joy at the moment. These coconut caramel rolls are incredible, decadent and vegan!!! I have never had a better roll than this and I hope you enjoy them as much as I do.
Tamarind Chicken
This tamarind chicken is bursting with flavours: tangy, sour, and slightly sweet. Not to mention exceptionally tender and juicy.
Peach Frangipane Galette
Galette’s are the best throw-together last minute types of dessert. Most are made up of some sort of flaky pastry with fruit in the middle, and they always come out looking beautiful and rustic. This one is also just as easy, but with a lil extra something called frangipane. It adds a delicious creamy and nutty flavour to the dessert.
Puff Pastry Orange Cinnamon Rolls
Meet the palmier cinnamon roll hybrid. You get the best of both worlds; layers of flakey pastry, swirls of buttery warm spices and an extra lil something with the crispy caramelised sugar.
Tomato & Roasted Garlic Tart
This tart is so easy to make, but so delicious. Now that tomatoes are in season, I decided to make a simple, and light tart, perfect for a hot summers day. The roasted garlic brings this simple dish to another level.
Triple Chocolate Hazelnut Cookies
This is a brownie/cookie hybrid. A cookie with a crackly exterior and fudgy interior… that also tastes like Nutella. It tastes like an absolute dream.

This banana bread is incredibly delicious and versatile. It can be made gluten-free as well as vegan. Add Daim chunks or any chunks you want to bring it that extra lil somethin somethin.
Tahini Chocolate Chip Cookies
I am a huge fan of choc chip cookies, and decided to create my own with the addition of tahini and sesame seeds. This recipe is perfectly balanced has crispy edges and a gooey middle.

It’s all about pantry staples. These empanadas are the perfect parcels to have- whether its for a picnic, a snack, or part of your meal, they are absolutely delicious and incredibly easy to make.
