My Staple 2020 Recipes
It’s 2021, but still feels like it should be 2020 as nothing has changed. We’re still in lockdown, there’s still nothing to do, and I have been cooking way more than I ever have - literally.
I thought it would be a great idea to share some of my recipes that have become staples in my life (or have been staples for a good portion of my life)- recipes I rely on whenever I need good (quick-ish) food that doesn’t require too much effort, but comes out delicious each and every time.
These are cooked very often anytime a quick lunch or dinner is needed. They’re made with ingredients I always have on hand- in the fridge or pantry.
This tuna curry is one of my dad’s favourite dishes and one of my favourite fish dishes - I’ve made it so many times since developing the recipe. Since moving out, my mum has also been making it regularly, even substituting tuna for aubergine for a veggie dish- it works beautifully.
This is one of my boyfriends favourite, anytime we brainstorm dishes we want to eat this one comes up far too often. It’s juicy, full of umami, simple but so crunchy and not very demanding.
I've become an even bigger fan of baking during all the lockdowns, but its always a few recipes on rotation. Every week or so, a sourdough boule is baked, with every week (depending on energy levels)some sourdough pizza. I’m very fortunate to be able to go into the office every week - I’ve made the Tahini Choc Chip cookies a few times which are devoured every time, and the g/f pear loaf was gone in no time.
Tapioca pudding has always been a staple in my household. It’s a fresh, simple and the textures are some of my favs.
Hopefully this article has helped or inspired you to try out a new dish and maybe find one of your favourite comfort foods. I don’t know how much longer we will be in this situation for, but hopefully some of these recipes can put a smile on your face and make your taste buds happy.
