The first time I had ‘nduja it changed my life- dramatic, but it is one of my favourite cured meat products on the market. When I found a place where I could actually buy the ‘nduja itself, I bought some and thats when I started masking ‘nduja pasta. That was 4 years ago, and the recipe hasn’t changed. It’s one of my favourites, a go-to whenever I want to treat myself to a home-cooked meaty dish that takes little to no time.
Chickpea & Veg Coconut Curry
This chickpea coconut stew is the most versatile, and seasonal-less dish you can make. Because of it’s delicate flavours the stew can be eaten in summer as well as in winter, adding whatever seasonal hard veg you may have.
