Tomato Salad with Shallot Za’atar Dressing

If there’s one thing you need to know about me, it’s that i LOVE za’atar. My favourite is the Palestinian blend, as each country has a blend with different flavours - I buy mine from Zaytoun.

This simple side salad is a great way of showcasing tomatoes in peak season, as they’re delicious, juicy, and sweet. The dressing adds a touch of herby nuttiness, with a mellow astringency from the shallots.

Ingredients

1-2 big beef tomatoes or 4-5 normal tomatoes, sliced thin or in pieces

3 tbsp olive oil

4 tsp za’atar

1 small shallot, finely minced

1 tbsp Pomegranate molasses

Salt

Method

1. In a small bowl, mix together the olive oil, za’atar, shallot, and pomegranate molasses. Season lightly with salt.

2. Place the tomatoes into a serving bowl, lightly sprinkle some salt onto them - this will let the tomato juices seep out making a more flavourful tomato and dressing.

3. Drizzle the za’atar dressing onto the tomatoes. Let the tomatoes rest and serve after 15 mins or serve straight away.
