Shiitake & Tofu Laab
Laab is one of my favourite meals for summer. It’s pungent seasonings and fresh herbs make the dish ridiculously delish.. but I had never had a plant based laab before making this one. The use of tofu and shiitake bring a meatiness to the dish, still keeping it light and adding even more flavour into the mix. This is definitely my new favourite laab.
Childhood Chicken Adobo
Chicken adobo is one of my favourite childhood dishes. The ingredients used to make it create a sort of balance in your mouth that not many dishes can emulate. Eat it with piping hot white rice, there’s nothing better.
Rice Pudding
I grew up eating Peruvian rice pudding. After years of not having it I had a craving and came up with this recipe based on my memories of how it tasted in my youth. This recipe is a healthier alternative to other rice puddings out there and so extremely easy to make.
