One of my favourite simple desserts. I grew up with this delicious pudding- but I know its a love or hate dish! If you’re a fan of boba, give this a try, it has the same textures as you might find in the drinks.

Socca
Socca is one of my go-to easy meals. I made the base and top it off with anything I can find in the fridge. It’s filling and delicious. This specific one is creamy in the middle and crispy around the edges.
Courgette & Corn Fritters with Yogurt & Herb Chutney
These gluten free fritters are made to be super crispy on the outside and soft and chewy in the middle. The corn brings out pops of sweetness, all of this complimenting the slightly salty sour chutney. It really is one of the best summer snacks you could make.
Recipe-less Tofu scramble
Tofu is not everyones cup of tea, but when prepared properly it bursts with flavour. When I don’t feel like having eggs, or I want a veggie filled scramble, tofu is the way I go.
Basic Lentil dal
This is one of the staple dishes made in my household. There’s always this specific lentil dal wither fresh or in the freezer because it’s a perfect side dish. Whether it’s eaten alone with rice, or with some fish, chicken… It’s perfect. It’s also made of pantry staples only… so it really could not get any better.

This banana bread is incredibly delicious and versatile. It can be made gluten-free as well as vegan. Add Daim chunks or any chunks you want to bring it that extra lil somethin somethin.
