Savoury Melon & Halloumi Salad

If you love the classic sweet and salty pairing of ham & melon, this is right up your alley. A veggie alternative, full of flavour and sunshine. 

Notes: I used a cantaloupe, but any melon will work.

Serves: 2-4 

Prep/Cook Time: 15-20 minutes

Ingredients

400g Sweet Melon of your Choice, peeled and deseeded

150g Halloumi, thinly sliced/shaved

10g Mint, leaves picked, stems discarded 

1 Tsp Nigella Seeds

1 Tsp Aleppo Pepper

20g Pumpkin Seeds

Sherry Vinegar, to taste

50ml Olive Oil

Salt

Method:

  1. Chop the melon into bite sized chunks. Add the halloumi, nigella seeds and aleppo pepper into a heat-safe bowl. 

  2. Pour the olive oil into a small saucepan and add the pumpkin seeds. Place onto medium-high heat and cook stirring, until the pumpkin seeds start to pop. Pour onto the halloumi , season with vinegar and mix. 

  3. Before serving, toss the melon and mint leaves, then serve immediately.
