Grilled Halloumi, Basil & Watermelon Salad

Summer is salad season. Even if it hasn’t felt like summer in the UK… Summer produce is in full swing.

This gorgeous salty cheese pairs perfectly with juicy sweet watermelon creating a balanced marriage. The lime vinaigrette enhances all the flavours and the herbaceous basil and peppery rocket brings pop to the dish.

Serves: 2-4 people

prep/cooking time: 15-20 minutes

Ingredients

For the Vinaigrette:

2 tbsps lime juice

a pinch of lime zest

2 tbsps olive oil

2 1/2 tsps cane sugar

salt

Method:

  1. In a jar, add all the ingredients and shake until incorporated and emulsified. Season with salt, set aside.

For the Salad:

1 block of Halloumi

1/2 a small ripe watermelon, cut into cubes

1 bunch of fresh Basil

1 bag or 150g of rocket

Method

1. Cut the Halloumi into roughly the same size cubes as the watermelon. Pat each cube dry.

2. Coat the the halloumi in a drizzle of oil, and add to a pan on medium-high heat. Cook until all sides are golden.

3. In a salad bowl, add the watermelon, fresh basil and rocket. When the halloumi is done, add it to the bowl along with the dressing. Toss to coat everything evenly, and serve straight away.
