Recipe-less Egg Sarnie

Searching for a recipe to make a quick lunch or dinner is time consuming, also the likelihood of having all the ingredients needed are unlikely. I started cooking with my own intuition, but I've realised that a lot of  people can't whip something up just like that.

Recipes are here to help us create dishes giving us the exact amounts needed, but teaching yourself how to substitute and put something together without the help of them is a little harder. The goal with 'recipe-less' is to create something customisable and adaptable so you can make it into whatever you want. It's a base recipe that you can build upon without any exact measurements needed.  It helps you understand your palate and what textures, flavours you like. 

This base recipe is for an egg sandwich.  I never found egg sandwiches appealing until I tried my first one this easter, and since It's been one of my favourite 'treat yourself' sandwiches.

This open-faced egg sandwich is made of egg, olive oil, salt, pepper, parmesan and fresh thyme. 

Cooking/prep time: 10-15 minutes

Main ingredients:

-Bread

-Eggs

-Olive oil 

-Salt

Additional ingredients:

-herbs (thyme, rosemary, parsley, basil, oregano...)

-spices (pepper, paprika, chili powder, cumin...)

-hot sauce, chilli…

-cheese (cheedar, parmesan, pecorino, feta, goat...)

-veggies/fruit (sprouts or salad, cucumber, tomato, pepper, fennel..)

 

Method

1. Boil and peel eggs ( boil to your desired consistency. A soft boil creates a creamy mixture) 

2. In a bowl, mash the eggs add the olive oil and salt. (The more you mash the eggs and the more olive oil you add the runnier the consistency will be) 

3. Add whatever additional ingredients

4. Layer onto toasted bread, and enjoy!
