Burnt Honey and Clementine Agrodolce

This is a riff off one of my favourite glazes I did for a sprouts recipe I did 2 years ago. The addition of the clementine (which is in season) adds a great flavour to the burnt honey.

Tip: This glaze goes well with any kind of roasted veg (not only sprouts)

Makes enough for 500g of veg

Ingredients

1 Clementine

4 tbsp clear honey

1/2 tsp chilli flakes

1 tbsp apple cider vinegar

salt

Roasted Sprouts, Parsnips or Carrots (or any other veg)

Method

1. Zest and halve the clementine.

2. In a small pot on medium heat, add the honey and let it simmer until it turns dark amber, stirring every so often. When it reaches that colour, take it off the heat and add the chilli flakes and apple cider vinegar and the juice of the clementine, stir until the bubbles subside and everything is thoroughly mixed in.

3. Toss the roasted veg in the glaze - if the honey mixture has solidified or gone cold, put it back on the heat with a splash of water and stir until it melts into a drizzling consistency.
