Recipe-less Chilli Oil

The goal with 'recipe-less' is to create something customisable and adaptable so you can make it into whatever you want. It's a base recipe that you can build upon without any exact measurements needed. It helps you understand your palate and what textures, flavours you like.

With chilli oil there are so many flavour profiles you can go for; the type of nut, seed, chilli flake, spcies you use will determine the flavour and texture of the product.

Main Ingredients:

Neutral Oil

Chilli Flakes

Salt

pinch of MSG (optional)

Additional Ingredients:

Toasted nuts- peanuts, hazelnuts, pistachio, macadamia, almonds, cashews…

Toasted seeds- sesame, pumpkin, sunflower…

Condiments/sauces/puree: Soy, Vinegar, Ketchup, tomato puree, nut butters…

Fresh- grated ginger, grated garlic, sliced spring onion, minced coriander…

Ground spices- cinnamon, black pepper, turmeric, cumin, coriander, paprika, smoked paprika, chilli powders, Szechuan peppercorns…

Method

1. Add the chilli flakes, salt, dry ingredients and fresh into a heatproof bowl - you want to use a bigger bowl than expected as the oil will bubble and expand.

2. Heat up as much neutral oil as you’d like until hot, almost smoking. (you want the oil to just about cover the contents of the bowl)

3. Pour the oil into the bowl (it will bubble) and let cool down a little.

4. If using any sauces, add it to the slightly cooled chilli oil. Taste and season with more salt if needed. This chilli oil can keep up to 1 week if stored in an airtight container. If you’re not using any fresh ingredients, it will keep up to 1 month.
