Shaved Frozen Strawberries and Whipped Labne  

I don’t hop onto food trends much, but this shaved fruit one… I absolutely love. It’s the perfect quick snack, and even great dessert option when its hot out. Shaving frozen fruit creates this fluffy texture, and as soon as it hits your mouth, it starts melting into a jammy, sweet mess. It’s stupendous.

I’ve taken the iconic strawberries and cream combo, and spiked the cream part with a touch of orange blossom (not enough to make it sickly floral) and added in some labne for a little tang and savouriness. You can switch up the fruit - do it with frozen peaches, mango, cherries… whatever your heart desires and whatever you need to use up in the freezer.

Serves 2 

Prep Time: 5-10 mins

Ingredients 

10g Shelled Pistachios

1 Tbsp Heavy Cream 

1 Tbsp Milk 

2 Tbsp Labne or Greek Yoghurt

1/4 tsp Orange Blossom 

Honey, to taste 

Frozen Strawberries (as much as your heart wants)

Extra Virgin Olive Oil, to taste

Method: 

  1. Add the pistachios into a food processor, blitz until your desired liking (i finely ground mine). Set aside.

  2. Into a bowl, add the heavy cream, milk, labne/greek yoghurt and orange blossom. Whisk together until smooth and fluffy, season to taste with honey.  If you want this mixture less thick, whisk a little more milk until your desired consistency. 

  3. Using a fine grater/microplane, grate the frozen strawberries into a bowl. Top with the whipped labne, a scattering of pistachios and a drizzle of olive oil.
