Passion Fruit ‘Juice’

I have 3 drinks I alternate between when on holiday in the seychelles; fresh passion fruit ‘juice,’ fresh pineapple juice, and fresh limeade. The limade and passion fruit juice are essentially fruit, sugar, water, and a dash of salt - the salt is key, it hepls hugely with flavour and keeps you hydrated (myth or not, that’s the reason it’s used in ‘juices’ in the Seychelles).

With the weather getting warmer, I start to crave fresh juices, and what better way to feel like you’re on holiday whilst in quarantine than having a beachy summer’s drink.

prep time: 5 minutes

chill time: 20-30mins

Serves: 1L

Tip: If you have a blender, place all ingredients into it and blend until everything is incorporated, strain seeds out. This will result in a stronger tasting juice.

Ingredients

1 passion fruit

1 lemon

1/2 lime

3-4 tbsp sugar

1/4-1/3 tsp salt (depending on the type of salt you have it may need more or less, so start with a little)

4 cups water

Method

1. In a pitcher or jug, add the inside of the passion fruit, lemon juice, lime juice, sugar and salt. Mix together until the sugar granules start to dissolve.

2. Add the water into the jug and mix until everything is incorporated. Taste and season with more sugar and salt if needed. Place in the fridge for 20-30 minutes or until cold.
