Maple Pecan Brown Butter Glaze

This glaze is nutty and a little sweeter than most. It contrasts beautifully with many festive sides which brings dimension to your average festive meal.

I’ve used this glaze with roasted carrots

Tip: I would recommend this glaze with roasted carrots, turnips or sweet potatoes

Makes enough for 700g of roasted veg

Ingredients

60g Unsalted Butter

50g Pecans

6 Tbsps Maple Syrup

Method

1. Roughly chop the pecans. In a small dry frying pan , add the pecans and lightly toast the pecans, 2-3 minutes. Transfer them into a bowl.

2. Re-use the pan and place on medium heat, add in the butter. Stir until it starts to foam and eventually turns brown, this will take around 3-4 minutes. You know the butter has browned when you can smell a nutty aroma.

3. Stir the pecans and maple into the brown butter and remove from the heat. The mixture will bubble, but continue stirring until they subside.

4.. Pour the maple pecan brown butter onto your roasted veg, and season with some flakey salt for some contrast.
