Tzatziki

Tzatziki is one of my favourite yogurt based dips right after Labne. It’s fresh and tangy, and goes well with anything you could possibly imagine.

prep/cooking time: 15 minutes

Makes: ~ 1 cup

Ingredients:
2/3 cup cucumber, grated

1 cup full-fat greek yogurt

1 large clove of garlic, minced or grated optional

3 tsp fresh mint, minced

1 tsp fresh dill, minced

1 tbsp lemon juice

1 tsp lemon zest

1.5 tbsp extra virgin olive oil

Method:

1. Place the grated cucumber in a strainer on top of a bowl and add 1⁄4 tsp of salt. Mix the two ingredients together and let sit for 10 minutes.

2. In another bowl add the yogurt, garlic, mint, dill, lemon juice and zest. Mix, and let sit whilst waiting for the cucumbers.

3. 10 minutes later, wring out as much water as possible from the cucumbers and add them to the yogurt mixture along with the olive oil. Stir to mix, and season with salt. Place the finished tzatztiki covered in the fridge until ready to eat, serve cold. Place in an airtight container and keep in the fridge for up to 5 days.
